Chewy Molasses-Spice Cookies

And again, Martha Stewart came in handy with this simple yet very festive recipe. (:

I can't quite describe the smell and flavour of molasses. It's a spice, warm, nutty and rich kinda taste and smell. Wiki says you can replace molasses with maple syrup, black treacle, honey and dark corn syrup. I was doing no substitution. So molasses it was; Brer Rabbit Full Flavour Molasses. yum.



Ingredients
  1. 2 cups plain flour
  2. 1 1/2 tsp double-acting baking powder
  3. 1 tsp ground cinnamon
  4. 1/2 tsp ground nutmeg
  5. 1/2 tsp salt
  6. 1 cup sugar
  7. 3/4 cup butter
  8. 1 egg
  9. 1/4 cup molasses
Method
  1. Mix butter and sugar until smooth.
  2. Add egg and molasses to mixture until well combined
  3. Gradually add in all the dry ingredients and mix until a dough forms
  4. Pour some sugar into a shallow dish
  5. Pinch off and roll dough into balls approximately 1 tbs in size
  6. Roll the balls of dough in the sugar until coated before placing on baking sheets
  7. Space balls out at least 3" apart
  8. Place baking sheets into a pre-heated oven of 180 degrees C and bake until the edges are just firm (approx. 10-15mins)
  9. Remove cooked cookies from the oven and transfer to a cooling rack to cool completely
