Eggnog Bundt Cake

Hello! A very blessed Christmas to everyone. (:

And as promised, here's the first of 6 Christmas goodies I baked for this year...

I'm not sure how many actually drink Eggnog but here's the Wikipedia definition:

Eggnog, or egg nog, is a sweetened dairy-based beverage traditionally made with milk and/or cream, sugar, beaten eggs (which gives it a frothy texture), and liquor. Brandy, rum, whisky, bourbon, KahlĂșa, vodka, or a combination of liquors are sometimes added; and the finished serving would be garnished with a sprinkling of ground cinnamon or nutmeg.[1]
Eggnog is a popular drink throughout the United States and Canada, and is usually associated with winter celebrations such as Thanksgiving,Christmas, and the New Year. Commercial non-alcoholic eggnog is typically available only in the winter season. Eggnog may be added as a flavouring to food or drinks such as coffee and tea. Eggnog as a custard can also be used as an ice cream base.

So I found this recipe on LickTheBowlGood and decided it had to be on my list.

Ingredients
  1. 1 package of yellow cake mix
  2. 1 1/2 cups of eggnog
  3. 1/3 cup vegetable oil
  4. 3 eggs
  5. 1 tsp rum essence
  6. 1/2 ground nutmeg
  7. 1/2 cup of sliced almonds
Method
  1. Grease the bundt tin with softened butter
  2. Press sliced almonds around the buttered surface of the tin
  3. Preheat oven to 180 degrees C.
  4. Mix all remaining ingredients in a large bowl on medium speed for about 2 mins
  5. Carefully spoon batter into prepared pan
  6. Put cake into oven for about 30 mins or until a skewer inserted comes out dry
  7. Cool for 10 mins before inverting onto a cooling rack
It doesn't look very fancy like a log cake or iced fruit cake or anything but it's a nice change from all the overly rich food usually served at Christmas.
